Lime, basil & black pepper chocolates
Chocolate day at cookery school! We got turned loose on massive heaps of beautiful chocolate, crates of fresh fruit, herbs and spices, and Willy Wonka style started to create our own flavour combinations. For these beauties, I infused lime zest, basil and black peppercorns into 200ml hot double cream, mixed it with 170g dark chocolate and 170g milk chocolate, then left the mixture to set before rolling into shapes & dipping into melted, tempered chocolate and decorating. So much fun, and absolutely delicious!
